Pumpkin Muffins
1 egg
1 cup milk
1/4 cup oil
1/2 cup pumpkin
1/2 cup raisins
2 cups all purpose flour
1/2 cup splenda-with sugar (or just sugar)
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon cinnamon
1/2teaspoon nutmeg
1/4 teaspoon cloves
Preheat oven to 375 degrees
Spray or butter bottom of 12 medium or 6 large muffin tins.
Beat egg, stir in all liquid ingredients. Mix dry ingredients so all spices are well dispersed. Add wet ingredients just until flour is moistened. Batter should be lumpy. Fill muffin cups 2/3 full. Bake 20 to 25 minutes until golden brown. Remove from pan. Good alone or with a powdered sugar glaze. |
